Tomato Omelet Recipe
Ingredients
- 6 eggs well beaten
- 4 medium sized tomatoes
- pepper and salt
Instructions
Peel and chop the tomatoes, season with pepper and salt. Mix 2 tablespoonfuls of flour with 1 tablespoonful of butter and mix with the tomatoes. Stir into this the beaten eggs and cook as for other omelets. The tomatoes must be chopped very fine, and unless they are thoroughly ripe should be slightly cooked before using.
